Spicy Mintermelon Cocktail
Although summer is winding down, the heat has yet to subside and watermelon is still plentiful. Try out this refreshing cocktail with a spicy twist for a bit of a reprieve.

Ingredients
2 oz. tequila, preferably Reposado
0.5 oz. fresh lime juice
0.25 oz. simple syrup or agave syrup*
5-10 fresh mint leaves (depending on size), plus an extra sprig for garnish
4 oz. fresh watermelon juice**
Dash of Hellfire Bitters
Ice
Cocktail shaker
Muddler
Instructions
Add the tequila, lime juice, mint leaves, and simple syrup. Lightly muddle the mint leaves to release the oils. Add the watermelon juice and a dash of the Hellfire Bitters to the shaker and fill with ice. Seal and shake vigorously for 10 seconds. Strain the cocktail into a Collins glass and top with ice. Garnish with a sprig of mint.
If you prefer a little more spice, feel free to add another dash of the Hellfire Bitters.
Notes
*To make a quick simple syrup, dissolve 1/2 cup sugar into 1/2 cup hot water in a jar. Shake to combine and cool in fridge. To make an agave syrup, dissolve 1/2 cup agave nectar into 1/2 cup hot water in a jar. Shake to combine and cool in fridge. Extra simple syrup and agave syrup can be stored in the fridge up to a month.
**To make watermelon juice, place cut pieces of watermelon into a blender. Blend on high until fully liquefied. Strain the juice through a fine mesh strainer into a pitcher or similar container. Store in fridge.
